Main Course – August

Strawberry Sorbet

By Chef Arturo Vargas

Have you ever heard the expression, “If you can’t take the heat, then stay out of the kitchen?”  Well, as far as I’m concerned, the weather during the month of August is hot enough, so who really needs a hot kitchen?!

August is a wonderful month for fresh fruit, and my favorites – strawberries – are ripe and in-season at this time of year.  I know you’ll love this sorbet recipe because, not only is it extremely pleasing to the eye, but it makes for a healthy, sweet dessert that is a perfect and delicious way to cool off.  And, best of all, it’s quick and easy so you can prepare it, devour it and still have plenty of time to enjoy the dog days of summer!

Eat well and enjoy!

Fresh Strawberry Sorbet Recipe A La Cava

1/2 cup of granulated sugar

2 cups of ice cubes

1 pint of fresh ripe strawberries

1/4 cup of freshly-squeezed orange juice

2 cups of sparkling wine (Champagne)

1 bunch of fresh mint

Lightly rinse and dry the strawberries, then hull and cut in halves.  In a food processor or blender, puree the strawberries with 1/4 cup of the sugar.  Add orange juice, sparkling wine, fresh mint, ice cubes and remaining sugar to the pureed strawberries.  Thoroughly blend.  Serve in a martini glass for an added touch and enjoy summertime.
