“You shouldn’t sacrifice flavor and satisfaction to eat well. One of the many things I love about French culture and cuisine is the attitude and believe that food should be celebrated. This celebration and romance with food, inspired our new Smart Choice recipes,” said Susan Dederen, la Madeleine’s vice president of culinary operations.  “We are also celebrating our 35th anniversary this February. In honor of the occasion, we created an Anniversarie éclair filled with chocolate pastry cream, bananas and caramel crisp pears then topped with whipped cream. The flavors are magical together. Our pastry chefs will be making the Anniversarie éclairs late January through March.”
