ARTURO’S APPLE COBBLER

When I think about some of my favorite comfort foods, my thoughts immediately go to the sweet gooey apple cobbler I fell in love with as a boy. It’s old-fashioned, filling and of course, very delicious!  Add a scoop of vanilla ice cream on the side, and you’ll swear you’ve found heaven on Earth!

Ingredients:

  • 8 cups of sliced, peeled green “Granny” apples
  • 3 cups all-purpose flour
  • 1 1/2 teaspoon baking powder
  • 1/2 cup of margarine
  • 1 cup sugar
  • 1 tablespoon of vanilla extract
  • 4 tablespoons of milk
  • 2 eggs
  • 1/2 tablespoon of salt
  • 1/2 tablespoon ground cinnamon

 

Preparation:

In a bowl combine flour, ¼ cup of sugar, baking powder and salt.

Cut in the margarine until crumbly. Sauté in a hot medium skillet the margarine with slice of apples and lime juice for 2 minutes, In a separate recipient beat eggs and vanilla, add to crumble mix with a fork gently mix in milk to moisten.

Stir until dough forms a ball. Then pressed half of the dough in to the bottom of a baking pan using margarine to greased the baking pan

Toss apples and cinnamon place over dough in baking pan, then roll chill dough to fit the top, place over apples, combine sugar and cinnamon to sprinkle on top baked at 350 for 45 minutes until crust is golden.
